A Promise Fulfilled

The Zapris family arrived in Australia from Greece almost 70 years ago. They left behind not only treasured heirlooms but a strong family tradition of winemaking. At the time, John, the youngest son at age 13, promised his father, Evangelos, that whatever uncertainties awaited them in their new homeland, that one day they would own another vineyard and winemaking would again continue, just as it had in Drimos.

Sir Paz Estate was established in the Yarra Valley in 1997. Sadly, it was 5 years after Evangelos had passed away. 

However, a family tradition had been restored, and a promise, over half a century old, was fulfilled.

It is here, in this inviting wine oasis, that wine and nature blend in perfect harmony at the acclaimed, family-owned Sir Paz Estate.

Established in 1997, Sir Paz Estate, inspired by a storied history and characterised by a rich Mediterranean ambience, has the good fortune of being the Yarra Valley’s highest altitude single vineyard. The captivating views, sweeping across the Yarra Valley, afford guests a moment of solitude to be enchanted by the abundantly rich yet serene landscape.

 

The Cellar Door & Restaurant

With sweeping views of the vineyard and valley beyond, our fully enclosed and heated terrace provides the ideal setting to relax and unwind. Guests are invited to enjoy a guided wine tasting that showcases the full breadth of the Sir Paz Estate range. As your appetite builds, our à la carte woodfire lunch menu offers the perfect culinary compliment … thoughtfully crafted to enhance the tasting experience.

As part of our exclusive cellar door offering, we also present a limited selection of back vintage wines, available for both tasting and purchase. This is a rare opportunity to explore the depth and character our wines develop over time.

Cooking with Woodfire

Sir Paz Estate brings the most primitive style method of Cooking with Woodfire to create woodfire-cooked food which you can order as you desire from our à la carte menu to match perfectly with our estate-grown wines. No fryers, no microwaves, no gas or electric ovens. Our Woodfire Oven & Barbecue is contained within our alfresco for you to enjoy the theatrics and aromas of freshly cooked woodfired food as you enjoy our sweeping vineyard and Yarra Valley views.

As Sir Paz Estate is a destination for families & friends to gather & create special memories. It is in this spirit that our menu is intended for all dishes to be shared.

Red Earth, Rare Soul

Sir Paz Estate resides on a rare belt of ancient red volcanic soil in Victoria’s Yarra Valley – a geological treasure formed by long-extinct lava flows and oxidised over thousands of years into rich, crimson-coloured earth.

Revered for the structure, finesse, and minerality it imparts, this soil brings remarkable depth and complexity to the estate’s wines – reds unfold with dark cherry, forest floor and lingering minerality, while whites reveal texture, vibrancy, and a stone-fruit core tinged with wet rock and flint.

More than a foundation, this rare soil is the quiet soul of the estate – fire turned to earth, and earth turned to flavour.

Our Wines

Sir Paz Estate wines are made exclusively from our own estate-grown grapes. Vines are hand-pruned and fruit hand-picked to ensure premium quality from the beginning.

In the winery, we apply gentle extraction with minimal intervention. Our wines see little to no fining or filtration, allowing the fruit’s natural character to shine. Maturation in premium French oak adds depth and elegance to our award-winning wines.

The Sir Paz range includes Shiraz, Merlot, Chardonnay, Sauvignon Blanc, Rosé, Blanc de Blanc and Sparkling Shiraz, each a true expression of its varietal.

Recent plantings of Pinot Noir mark an exciting new chapter, with the first vintage to be released in 2026.

Our Wine Club

Sir Paz Estate warmly invites you to join our Wine Club and enjoy a host of exclusive rewards.

As a Member, you will receive regular deliveries of our premium estate-grown wines, including current releases, Back Vintages and limited Museum Releases, all delivered directly to your door.

At Sir Paz Estate, your wedding day unfolds in a setting of beauty, privacy and romance. Surrounded by rolling vines and sweeping views, the estate offers a sense of calm and intimacy from the moment you arrive. Enjoy exclusive access to our alfresco all weather deck, elegant tasting room and open grass landing, perfect for both vows and celebration.

We welcome up to 80 guests for a seated reception or 120 for a cocktail style gathering.
